If 00 flour is unattainable, a reasonable alternative would be bread flour, which might slightly alter the final texture.

Appreciating Water Temperature and Hydration

Your water's temperature is pivotal for controlling fermentation pace and dough maturation. Opt for chilled water around 45°F (7°C) to foster slow fermentation, enriching the flavor profile, or select lukewarm water about 85°F (29°C) for faster fermentation times. The hydration ratio, being water to flour proportion, is optimally set from 60% to 70% to suit typical home ovens.

Yeast Usage and Time's Importance

The secret behind a delectably flavored dough lies in minimizing yeast usage to enhance the fermentation period. Our process involves a mere 0.2% fresh yeast relative to the flour's mass, letting the dough ferment for periods ranging from 24 to 48 hours. This gradual approach not only boosts flavor complexities but also results in dough that’s more digestible.

Salt serves a role exceeding mere taste enhancement—it fortifies gluten network and regulates the fermentation. Our advice?
